Ingrédients (pour 12 personnes)
Pour le sablé breton :
– 100g de farine
– 20g de poudre de noisettes
– 70g de sucre en poudre
– 1 gousse de vanille
– 90g de beurre salé
– 2 jaunes d’œufs
– 6g de levure chimique
Pour les pommes caramélisées :
– 200g de sucre
– 100g de beurre salé
– 6 pommes
Pour la mousse aux spéculoos :
– 300ml de lait
– 2 jaunes d’œufs
– 50g de sucre
– 2 feuilles de gélatine
– 90g de spéculoos
– 200g de crème liquide entière
Préparation
Pour le sablé breton :
– Battre le sucre et le beurre, ajouter les graines de la gousse de vanille.
– Ajouter les jaunes d’œufs et battre à nouveau.
– Ajouter la farine, la poudre de noisettes et la levure, mélanger.
– Former une boule, la filmer et laisser reposer au réfrigérateur pendant 1h.
– Préchauffer le four à 170°C.
– Étaler la pâte jusqu’à épaisseur de 1 à 2cm.
– Sur une plaque recouverte de papier sulfurisé, déposer la pâte dans un cadre à pâtisserie.
– Cuire au four pendant 15min et laisser refroidir.
Pour les pommes caramélisées :
– Dans une casserole, faire fondre le sucre jusqu’à l’obtention d’un caramel blond.
– Ajouter le beurre coupé en morceaux.
– Lorsque le beurre est incorporé, ajouter les pommes coupées en dés.
– Laisser compoter 15min.
Pour la mousse aux spéculoos :
– Faire ramollir les feuilles de gélatine dans de l’eau froide.
– Dans une casserole, faire bouillir le lait.
– Dans un saladier, blanchir les jaunes d’œufs avec le sucre.
– Verser le lait bouillant sur le mélange.
– Remettre dans la casserole et cuire comme une crème anglaise, à 85°C.
– Ajouter la gélatine essorée et les spéculoos.
– Mixer la préparation à l’aide d’un mixeur plongeant.
– Laisser refroidir.
– Monter la crème en chantilly et l’incorporer délicatement à la préparation précédente.
Montage
– Placer la base de sablé breton au fond du cadre à pâtisserie.
– Étaler les pommes caramélisées.
– Verser la mousse aux spéculoos et laisser au réfrigérateur pendant au moins 6h.
Remarque : pour la déco, ajouter quelques miettes de spéculoos et des tranches de pommes.
