Ingrédients (pour 25 petits cheesecakes)
Pour la pâte :
– 150g de biscuits secs (ici des Digestives)
– 50g de beurre
Pour le cheesecake :
– 300g de Philadelphia
– 10cl de crème fraiche épaisse
– 75g de sucre semoule
– 3 œufs
– 1/2 citron jaune
Pour le miroir aux framboises :
– 300g de purée de framboises
– 2 feuilles de gélatine
Préparation
Pour la pâte :
– Préchauffer le four à 150°C.
– Mixer les biscuits.
– Ajouter le beurre fondu.
– Tapisser le fond d’un moule en tassant bien.
– Faire cuire 10min.
Pour le cheesecake :
– Préchauffer le four à 180°C.
– Mettre le Philadelphia dans un saladier et fouetter pour le rendre souple.
– Ajouter la crème, le sucre, les œufs et le jus de citron.
– Mélanger afin d’obtenir une crème lisse.
– Verser sur la pâte biscuitée et faire cuire 30min.
– Laisser refroidir à température ambiante.
Pour le miroir aux fruits exotiques :
– Faire ramollir les feuilles de gélatine dans de l’eau froide.
– Dans une casserole, faire chauffer à feu doux la purée de framboises.
– Retirer du feu, ajouter la gélatine essorée et mélanger.
– Verser sur le cheesecake refroidi et laisser reposer une nuit au réfrigérateur.
Remarque : pour la déco, ajouter quelques framboises.
