Temps de préparation : ♦♦♦          Difficulté : ♦♦♦

Ingrédients (pour 8 personnes)

Pour la dacquoise aux noisettes :

– 75g de sucre glace
– 70g de poudre de noisettes
– 3 blancs d’œufs
– 25g de sucre semoule

Pour le croustillant praliné :

– 150g de pâte de praliné noisette
– 60g de chocolat au lait
– 70g de gavottes

Pour le crémeux passion :

– 250g de lait
– 2 jaunes d’œufs
– 50g de sucre semoule
– 20g de maïzena
– 80g de beurre
– 4 fruits de la passion

Pour le disque en chocolat :

– 100g de chocolat au lait

Pour la ganache montée au chocolat au lait :

– 170g de chocolat au lait
– 350g de crème liquide entière

Préparation

Pour la dacquoise aux noisettes :

– Tamiser le sucre glace et la poudre de noisettes.
– Monter les blancs en neige en les meringuant petit à petit avec le sucre semoule.
– Mélanger délicatement à la poudre de noisettes.
– Mettre dans une poche à douille et coucher sur une plaque tapissé de papier sulfurisé un disque de 24cm de diamètre.
– Cuire au four 15min à 180°C.

Pour le croustillant praliné :

– Faire fondre le chocolat et la pâte de praliné au bain-marie.
– Ajouter les gavottes écrasées et mélanger.
– Étaler entre deux feuilles de papier sulfurisé sur une épaisseur de 2mm et mettre au frais.
– Découper un cercle de 24cm de diamètre.

Pour le crémeux passion :

– Dans une casserole, porter le lait à ébullition.
– Dans un saladier, fouetter les œufs, le sucre et la maïzena.
– Verser un peu de lait bouillant sur la préparation et reverser l’ensemble dans la casserole, faire chauffer à feu moyen sans cesser de remuer.
– Quand la crème commence à épaissir, retirer du feu.
– Ajouter le beurre coupé en morceaux et la pulpe des fruits de la passion mixée et passée au chinois.
– Filmer et laisser refroidir au réfrigérateur.

Pour le disque de chocolat :

– Faire fondre le chocolat au bain-marie.
– Étaler le chocolat sur une feuille rhodoïd.
– Lorsqu’il commence à figer, dessiner un cercle de 24cm de diamètre.
– Recouvrer de papier sulfurisé et poser des poids afin d’éviter la déformation du chocolat.
– Placer au réfrigérateur pendant au moins 1h.

Pour la ganache montée au chocolat au lait :

– Faire fondre le chocolat au bain marie.
– Dans une casserole, faire chauffer 100g de crème liquide entière.
– Verser en trois fois sur le chocolat fondu, mélanger.
– Ajouter les 250g de crème liquide froide en trois fois, mélanger.
– Laisser refroidir au moins 3h au frais.
– Monter la crème en chantilly.

Montage

– Disposer le croustillant praliné sur la dacquoise.
P1090864– Mettre le crémeux passion dans une poche à douille puis disposer sur le croustillant.
P1090869– Ajouter ensuite le disque de chocolat.
P1090872– Mettre la ganache montée au chocolat dans une poche munie d’une douille saint honoré et dessiner un cercle de plus en plus grand sur le disque de chocolat.

Remarque : pour la déco, saupoudrer de cacao, d’éclats de chocolat et de pralin en grains
