Tarte chocolat, caramel et cacahuète
Une tarte croustillante façon Snickers® garnie d’un caramel moelleux, de petits morceaux de nougat, d’une ganache au chocolat au lait et d’une chantilly à la cacahuète

Cette recette vient du blog Un goût de trop peu, j’ai fait très peu de changements, la recette est top comme ça!

Ingrédients (pour 8 personnes)

Pour la pâte sucrée :

– 150g de beurre mou
– 90g de sucre glace
– 30g de poudre d’amandes
– 2 pincées de fleur de sel
– 1/2 gousse de vanille
– 1 œuf
– 250g de farine

Pour le caramel :

– 100g de sucre
– 20g de glucose
– 20g de beurre salé
– 100g de crème liquide
– 20g de cacahuète + 20g de nougat

Pour la ganache au chocolat :

– 225g de chocolat au lait
– 150g de crème liquide

Pour la chantilly à la cacahuète :

– 120g de crème liquide
– 60g de mascarpone
– 25g de beurre de cacahuète

Préparation

Pour la pâte sucrée :

– Travailler le beurre afin de le rendre bien souple
– Ajouter le sucre glace, la poudre d’amandes, la fleur de sel, les graines de la gousse de vanille et l’œuf et mélanger afin d’obtenir un mélange crémeux.
– Ajouter la farine et pétrir jusqu’à ce que la pâte forme une boule.
– Diviser la pâte en deux, laisser reposer un pâton au moins 1h au réfrigérateur et conserver l’autre pâton au congélateur pour une prochaine recette.
– Étaler la pâte et foncer un cercle à pâtisserie de 24cm de diamètre.
– Cuire 15min à 180°C.
– Laisser refroidir.

Pour le caramel :

– Porter la crème à ébullition.
– Faire caraméliser le sucre et le glucose dans une casserole sur feu moyen.
– Lorsque le caramel est prêt, ajouter le beurre et la crème chaude en prenant garde aux éclaboussures, mélanger.
– Remettre sur feu moyen et laisser bouillir quelques instants.

Pour la ganache au chocolat :

– Porter la crème à ébullition et verser en 3 fois sur le chocolat haché.
– Mixer au mixeur plongeant afin d’obtenir une préparation bien lisse.

Pour la chantilly à la cacahuète :

– Monter la crème en chantilly.
– Dans un saladier, détendre le mascarpone au fouet puis incorporer le beurre de cacahuète et le sucre.
– Ajouter ce mélange petit à petit à la crème montée tout en continuant de fouetter.

Montage

– Couler le caramel dans le fond de tarte.
P1110345– Ajouter les cacahuètes concassées et le nougat en brisures et mettre au frais 30min.
P1110346– Verser la ganache au chocolat sur le caramel et mettre au frais 30min.
P1110352– Mettre la chantilly à la cacahuète dans une poche à douille et dresser sur la ganache au chocolat.
– Décorer avec des copeaux de chocolat et des morceaux de nougat.
