Ingrédients (pour 8 personnes)
Pour la pâte sucrée :
– 150g de beurre mou
– 90g de sucre glace
– 30g de poudre d’amandes
– 2 pincées de fleur de sel
– 1/2 gousse de vanille
– 1 œuf
– 250g de farine
Pour la crème à l’amande :
– 60g de beurre mou
– 80g de poudre d’amandes
– 60g de sucre
– 1 œuf
Pour la compotée abricot/pêche :
– 4 abricots
– 2 pêches
– 50g de sucre
– 1 petit brin de romarin
Pour la chantilly au romarin :
– 90g de mascarpone
– 180g de crème entière liquide
– 50g de sucre
– 2 petits brins de romarin
Pour le montage :
– 1 pêche
– 1 abricot
– meringues
Préparation
Pour la pâte sucrée :
– Travailler le beurre afin de le rendre bien souple
– Ajouter le sucre glace, la poudre d’amandes, la fleur de sel, les graines de la gousse de vanille et l’œuf et mélanger afin d’obtenir un mélange crémeux.
– Ajouter la farine et pétrir jusqu’à ce que la pâte forme une boule.
– Diviser la pâte en deux, laisser reposer un pâton au moins 1h au réfrigérateur et conserver l’autre pâton au congélateur pour une prochaine recette.
– Étaler la pâte et foncer un cercle à pâtisserie de 24cm de diamètre.
– Faire cuire à blanc 10min à 150°C.
Pour la crème à l’amande :
– Mélanger le beurre mou avec le sucre semoule.
– Ajouter l’œuf, la poudre d’amandes et le rhum (selon les goûts), bien mélanger.
– Déposer sur le fond de pâte précuit et cuire au four 15min à 180°C.
Pour la compotée abricot/pêche :
– Couper les abricots et les pêches puis mettre dans une casserole.
– Ajouter le sucre, le brin de romarin et laisser compoter 15/20min à feu doux.
Pour la chantilly au romarin :
– Dans une casserole, faire chauffer 90g de crème liquide jusqu’à frémissement.
– Ajouter les brins de romarin, le sucre et le reste de crème froide.
– Détendre la mascarpone au fouet avec le mélange précédent.
– Laisser infuser 5/10min et chinoiser.
– Réserver au frais.
Montage
– Déposer la compotée abricot/pêche sur le fond de tarte.
– Monter la crème au romarin en chantilly, mettre dans une poche à douille et disposer sur la compotée.
– Disposer des tranches d’abricots, de pêches et quelques meringues pour ajouter du croustillant.

Bonjour, avant de commencer cette belle tarte, la crème chantilly au romarin vous la mettez dans un syphon ou le procédé est de la monter avec sucre glace au fouet ballon.

J’ai monté la crème chantilly au batteur électrique, le sucre a été incorporé avant à la préparation crème/mascarpone.
