Versaillais aux trois chocolats

Un classique toujours très apprécié : trois couches gourmandes de mousse au chocolat, sur une génoise aux noisettes et un croustillant au praliné

Ingrédients (pour 12 personnes)

Pour la dacquoise aux noisettes :

– 75g de sucre glace
– 70g de poudre de noisettes
– 3 blancs d’œufs
– 25g de sucre semoule

Pour le croustillant praliné :

– 90g de pâte de praliné noisette
– 40g de chocolat blanc
– 45g de gavottes

Pour la mousse au chocolat noir :

– 200g de crème liquide entière
– 100g de chocolat noir

Pour la mousse au chocolat au lait :

– 200g de crème liquide entière
– 100g de chocolat au lait

Pour la mousse au chocolat blanc :

– 200g de crème liquide entière
– 100g de chocolat blanc

Préparation

Pour la dacquoise aux noisettes :

– Tamiser le sucre glace et la poudre de noisettes.
– Monter les blancs en neige en les meringuant petit à petit avec le sucre semoule.
– Mélanger délicatement à la poudre de noisettes.
– Mettre dans une poche à douille et coucher sur une plaque tapissé de papier sulfurisé selon la forme du cadre à pâtisserie.
– Cuire au four 15min à 180°C.

Pour le croustillant praliné :

– Faire fondre le chocolat et la pâte de praliné au bain-marie.
– Ajouter les gavottes écrasées et mélanger.
– Étaler entre deux feuilles de papier sulfurisé sur une épaisseur de 2mm.

Pour les mousses :

– Faire fondre le chocolat au bain-marie.
– Monter la crème en chantilly bien ferme.
– Incorporer le chocolat et mélanger délicatement.

Montage

– Déposer la dacquoise au fond du cadre à pâtisserie.
– Disposer le croustillant praliné, lisser et réserver.
– Ajouter la mousse au chocolat noir, lisser et réserver au frais pendant 1h.
– Ajouter ensuite la mousse au chocolat au lait, lisser et réserver au frais pendant 1h.
– Terminer enfin par la mousse au chocolat blanc, lisser et réserver au frais 24h.

Remarque : pour la déco, saupoudrer de cacao.

      Bonjour,
      Je pense que si elles se sont écroulées, c’est que la crème n’était pas assez fouettée. Normalement, elles doivent déjà être fermes avant de passer au frais.

    Bonjour,
    Une astuce simple pour une mousse ferme : mettre la crème dans un récipient avec les fouets du batteur électrique dedans, le tout au congélateur quelques minutes.
    Le récipient, la crème et les fouets étant froids et à la même température, la mousse réussira sans problème
