Une version du royal chocolat avec une touche d’acidité apportée par les framboises

Temps de préparation : ♦♦          Difficulté : ♦♦

Ingrédients (pour 8 personnes)

Pour la dacquoise aux amandes :

– 75g de sucre glace
– 70g de poudre d’amandes
– 3 blancs d’œufs
– 25g de sucre semoule
– 1 cuillère à café de cacao amer non sucré (facultatif)

Pour le croustillant praliné :

– 200g de praliné
– 60g de chocolat au lait
– 80g de gavottes

Pour la mousse au chocolat :

– 200g de chocolat noir
– 400g de crème liquide entière

Pour le montage :

– 500g de framboises

Préparation

Pour la dacquoise aux amandes :

– Tamiser le sucre glace, la poudre d’amandes et le cacao.
– Monter les blancs en neige en les meringuant petit à petit avec le sucre semoule.
– Mélanger délicatement à la poudre d’amandes.
– Mettre dans une poche à douille et coucher sur une plaque tapissé de papier sulfurisé selon la forme du cadre à pâtisserie.
– Cuire au four 15min à 180°C.

Pour le croustillant praliné :

– Faire fondre le chocolat et la pâte de praliné au bain-marie.
– Ajouter les gavottes écrasées et mélanger.

Pour la mousse au chocolat :

– Faire fondre le chocolat au bain-marie.
– Monter la crème en chantilly bien ferme.
– Incorporer le chocolat et mélanger délicatement.

Montage

– Déposer la dacquoise au fond du cadre à pâtisserie.
– Disposer le croustillant praliné, lisser et réserver au frais pendant 1h.
– Disposer les framboises sur l’ensemble du croustillant.
– Ajouter la mousse au chocolat, lisser et réserver au frais pendant 24h.

Remarque : pour la déco, saupoudrer de cacao et ajouter quelques framboises fraiches.
