Ingrédients (pour 4 personnes)
Pour le biscuit à la cuillère :
– 2 blancs d’œufs
– 85g de sucre semoule
– 4 jaunes d’œufs
– 75g de farine
– sucre glace
Pour la crème mousseline à la pistache :
– 20cl de lait
– 1/2 gousse de vanille
– 2 jaunes d’œufs
– 50g de sucre semoule
– 15g de maïzena
– 100g de beurre mou
– 60g de pâte de pistaches
Pour le sirop au kirsch :
– 30g d’eau
– 20g de sucre
– quelques gouttes de kirsch
Pour le montage :
– 300g de fraises
– 1 blancs d’œuf
– 25g de sucre semoule
– gelée d’abricots
Préparation
Pour le biscuit à la cuillère :
– Monter les blancs en neige en les meringuant petit à petit avec le sucre semoule.
– Ajouter les jaunes d’œufs et fouetter quelques secondes.
– Incorporer la farine tamisée et mélanger délicatement.
– Répartir la pâte sur une plaque recouverte de papier sulfurisé.
– Saupoudrer de sucre glace.
– Cuire au four 10 min à 180°C.
– Laisser refroidir sur une grille à pâtisserie.
Pour la crème mousseline à la pistache :
– Dans une casserole, porter à ébullition le lait avec la gousse de vanille fendue et grattée de ses graines.
– Dans un saladier, fouetter les œufs, le sucre et la maïzena.
– Verser le lait bouillant sur la préparation et fouetter.
– Reverser l’ensemble dans la casserole et faire chauffer à feu moyen sans cesser de remuer.
– Quand la crème commence à épaissir, retirer du feu.
– Ajouter 50g de beurre, filmer et laisser refroidir au réfrigérateur.
– Fouetter les 50g de beurre restant jusqu’à blanchiment et ajouter la pâte de pistaches.
– Ajouter cette préparation à la crème pâtissière refroidie, mélanger et monter la crème au batteur.
Montage
– Déposer un biscuit au fond d’un cadre à pâtisserie.
– Réaliser un sirop en portant à ébullition l’eau et le sucre, puis en ajoutant le kirsch.
– A l’aide d’un pinceau, imbiber le biscuit avec ce sirop.
– Disposer les fraises autour du cadre.
– Ajouter un peu de crème mousseline, puis des fraises au centre.
– Étaler le reste de crème et lisser à la spatule.
– Disposer le second biscuit et imbiber de sirop.
– Réaliser une meringue avec le blanc d’œuf et le sucre semoule, puis étaler sur le biscuit.
– Brûler au chalumeau.
– Étaler la gelée d’abricots fondue au pinceau.
Remarque : pour la déco, ajouter quelques fraises.
