Pour le craquelin :

– 30g de beurre salé
– 40g de cassonade
– 40g de farine

Pour la pâte à choux :

– 65g d’eau
– 65g de lait
– 1/2 cuillère à café de sucre semoule
– 1/4 cuillère à café de sel fin
– 55g de beurre
– 70g de farine
– 2 œufs

Pour la crème au caramel beurre salé :

– 50cl de lait
– 1 gousse de vanille
– 6 jaunes d’œufs
– 100g de sucre semoule
– 50g de maïzena
– 150g de caramel au beurre salé

Pour la tuile au caramel :

– 100g de sucre

Pour le montage :

– fondant pâtissier
– colorant alimentaire couleur caramel

Préparation

Pour le craquelin :

– Mélanger tous les ingrédients et former une boule.
– Étaler finement entre deux feuilles de papier sulfurisé.
– Mettre au frais et découper à l’emporte pièce des disques de diamètre légèrement plus petit que celui des choux.

Pour la pâte à choux :

– Dans une casserole, verser l’eau, le lait, le sucre, le sel et le beurre coupé en morceaux et faire chauffer sur feu moyen.
– Lorsque le beurre est fondu et le mélange est bien chaud, ajouter la farine.
– Remuer avec une cuillère en bois jusqu’à ce que la farine soit totalement absorbée.
– Remettre sur feu moyen en continuant de mélanger pendant 30s pour dessécher la pâte.
– Incorporer les œufs un à un tout en mélangeant avec la cuillère en bois.
– Mettre la préparation dans une poche à douille.
– Sur une plaque recouverte de papier sulfurisé, dresser des choux de 5cm de diamètre et des choux de 2,5cm de diamètre.
– Déposer le craquelin.

– Dans un saladier, fouetter les œufs, le sucre et la maïzena.
– Verser le lait bouillant sur la préparation et fouetter.
– Reverser l’ensemble dans la casserole et faire chauffer à feu moyen sans cesser de remuer.
– Quand la crème commence à épaissir, retirer du feu.
– Ajouter le caramel au beurre salé, filmer et laisser refroidir au réfrigérateur.

Pour la tuile au caramel :

– Dans une casserole, faire fondre le sucre afin d’obtenir un caramel.
– Verser sur une plaque recouvert de papier sulfurisé et laisser refroidir.
– Casser le caramel en morceaux et mixer.
– Tamiser dans des cercles à pâtisserie et cuire au four 1min à 180°C.

– Faire chauffer le fondant et le colorant au bain marie à 35°C.
– Glacer les choux.
