Ingrédients (pour 6 personnes)
Pour la pâte à choux :
– 90g d’eau
– 90g de lait
– 1 cuillère à café de sucre semoule
– 1/2 cuillère à café de sel fin
– 80g de beurre
– 110g de farine
– 3 œufs
– éclats d’amandes, de noisettes, sucre en grains et morceaux de citrons confits
Pour la crème mousseline citron/basilic :
– 30cl de lait
– 10 feuilles de basilic
– 3 jaunes d’œufs
– 75g de sucre semoule
– 30g de maïzena
– 1 citron jaune
– 150g de beurre mou
Pour le confit d’ananas :
– 1 ananas
– 150g de sucre semoule
– 2 citrons
– 5 feuilles de basilic
Préparation
Pour la pâte à choux :
– Dans une casserole, verser l’eau, le lait, le sucre, le sel et le beurre coupé en morceaux et faire chauffer sur feu moyen.
– Lorsque le beurre est fondu et le mélange est bien chaud, ajouter la farine.
– Remuer avec une cuillère en bois jusqu’à ce que la farine soit totalement absorbée.
– Remettre sur feu moyen en continuant de mélanger pendant 30s pour dessécher la pâte.
– Incorporer les œufs un à un tout en mélangeant avec la cuillère en bois.
– Mettre la préparation dans une poche à douille.
– Sur une plaque recouverte de papier sulfurisé, dresser des cercles de 7cm de diamètre.
– Déposer une deuxième couche de pâte contre la première, et une troisième à cheval entre les deux.
– Saupoudrer d’éclats d’amandes, de noisettes et de sucre en grains.
– Enfourner 15 à 20min à 180°C.
– Laisser quelques minutes dans le four éteint puis déposer sur une grille.
– Ajouter quelques morceaux de citrons confits pour la déco.
Pour la crème mousseline citron/basilic :
– Dans une casserole, porter à ébullition le lait avec les feuilles de basilic ciselées.
– Dans un saladier, fouetter les œufs, le sucre et la maïzena.
– Ajouter le zeste du citron puis le jus.
– Verser le lait bouillant sur la préparation et fouetter.
– Reverser l’ensemble dans la casserole et faire chauffer à feu moyen sans cesser de remuer.
– Quand la crème commence à épaissir, retirer du feu.
– Ajouter 75g de beurre, filmer et laisser refroidir au réfrigérateur.
– Fouetter les 75g de beurre restant jusqu’à blanchiment.
– Ajouter cette préparation à la crème pâtissière refroidie, mélanger et monter la crème au batteur.
Pour le confit d’ananas :
– Découper l’ananas en dés et mettre à mariner 1h dans un saladier avec le sucre, le jus des citrons et le basilic ciselé.
– Verser dans une casserole et laisser cuire 45min.
– Mixer l’ensemble.
Montage
– Couper les Paris-Brest en deux, horizontalement.
– Déposer le confit d’ananas au fond des couronnes.
– Mettre la crème mousseline dans une poche munie d’une douille cannelée et déposer sur l’ananas.
– Poser le couvercle délicatement.
Délicieux 🙂 J’ai juste fait une couronne de choux au lieu de faire des couronnes individuelles! On arrive à faire environ 15 choux de 5 cm de diamètre environ. J’en ai mis 10 côte à côte pour faire une couronne et les autres à l’intérieur en superposition.
