Ingrédients (pour 8 personnes)
Pour la dacquoise aux amandes :
– 80g de sucre glace
– 70g de poudre d’amandes
– 3 blancs d’œufs
– 30g de sucre semoule
– amandes concassées
Pour le confit d’orange :
– 4 oranges
– 60g de sucre semoule
Pour la mousse au chocolat :
– 200g de chocolat noir
– 400g de crème liquide entière
Pour la feuille en chocolat :
– 100g de chocolat noir
– amandes concassées, zestes d’oranges, oranges confites
Préparation
Pour la dacquoise aux amandes :
– Tamiser le sucre glace, la poudre d’amandes et le cacao.
– Monter les blancs en neige en les meringuant petit à petit avec le sucre semoule.
– Mélanger délicatement à la poudre d’amandes.
– Mettre dans une poche à douille et coucher sur une plaque tapissé de papier sulfurisé selon la forme du cadre à pâtisserie.
– Ajouter des amandes concassées.
– Cuire au four 15min à 180°C.
Pour le confit d’oranges :
– Peler les oranges, les mettre dans l’eau froide et porter à ébullition.
– Renouveler l’opération afin d’éliminer l’amertume.
– Détailler les oranges en tranches.
– Mettre à confire dans une casserole avec le sucre semoule et laisser cuire pour éliminer un maximum d’eau.
Pour la mousse au chocolat :
– Faire fondre le chocolat au bain-marie.
– Monter la crème en chantilly bien ferme.
– Incorporer le chocolat et mélanger délicatement.
Pour la feuille en chocolat :
– Faire fondre le chocolat au bain-marie (à 55°C, puis redescendre à 28°C, puis remonter à 31°C).
– Étaler le chocolat sur une feuille de rhodoïd.
– Saupoudrer d’amandes concassées et de zestes d’oranges
– Recouvrer de papier sulfurisé et poser des poids afin d’éviter la déformation du chocolat.
– Placer au réfrigérateur pendant au moins 1h.
– Découper à la taille du cadre.
Montage
– Déposer la dacquoise au fond du cadre à pâtisserie.
– Disposer le confit d’oranges.
– Ajouter la mousse au chocolat, lisser et réserver au frais pendant 6h.
– Déposer délicatement la feuille en chocolat.
Remarque : pour la déco, ajouter des écorces d’oranges confites. Sur les côtés, disposer les morceaux de feuille en chocolat restants.
