Mille feuille pomme kiwi

La douceur de la pomme caramélisée et l’acidité du kiwi se mélangent délicatement entre ces deux feuilletés croustillants, le tout est recouvert d’une chantilly légère

Ingrédients (pour 8 personnes)

Pour la pâte feuilletée :

– 250g de farine
– 130g d’eau froide
– 40g de beurre fondu
– 5g de fleur de sel
– 170g de beurre mou

Pour la compote pomme/kiwi :

– 2 pommes
– 2 kiwis
– 1 citron

Pour les pommes caramélisées :

– 60g de sucre
– 4 pommes

Pour la crème chantilly :

– 350g de crème liquide entière
– 30g de sucre glace
– 1 gousse de vanille

Préparation

Pour la pâte feuilletée :

– Tamiser la farine dans un saladier.
– Creuser un puits et y verser progressivement l’eau, le beurre fondu et le sel.
– Mélanger sans trop la travailler, filmer et laisser reposer 2h au réfrigérateur.
– Étaler la pâte sur 1cm d’épaisseur.
– Placer le beurre aplati sur la pâte et refermer les bords pour l’enfermer complétement.
P1090232– Aplatir le feuilletage dans la longueur puis plier la pâte en trois (plier une extrémité au tiers de la pâte et recouvrir avec la deuxième extrémité). Tourner la pâte d’un quart de tour vers la droite, aplatir, plier en trois et tourner à nouveau d’un quart de tour vers la droite. Filmer et mettre au réfrigérateur 30min.

– Renouveler l’opération précédente 2fois (en laissant la pâte reposer au réfrigérateur 30min entre chaque utilisation).
– Après les 6 tours donnés, laisser reposer une nuit au réfrigérateur.
– Étaler la pâte afin d’obtenir une plaque de 30cm sur 40cm, puis piquer à l’aide d’une fourchette.
P1090469– Recouvrir la pâte d’une feuille de papier cuisson et placer une plaque dessus.
– Faire cuite 20min à 180°C.
– Laisser refroidir puis saupoudrer de sucre glace avec une passoire fine.
– Faire caraméliser 3 min à 220°C.
– Laisser refroidir.

Pour la compote pomme/kiwi :

– Peler les fruits et découper en dés.
– Mettre dans une casserole et ajouter le jus de citron.
– Laisser compoter 20min à feu doux.

Pour les pommes caramélisées :

– Dans une casserole, faire fondre le sucre jusqu’à l’obtention d’un caramel blond.
– Ajouter les pommes coupées en tranches.
– Laisser compoter 10min.

Pour la crème chantilly :

– Monter la crème en chantilly bien ferme avec le sucre glace et les graines de la gousse de vanille.
– Mettre dans une poche à douille.

Montage

– Découper le feuilletage en rectangles de même taille.
– Déposer une couche de compote pomme/kiwi.
