Opéra Rock

Un grand classique de la pâtisserie française revisité avec un biscuit joconde au cacao, un crémeux au chocolat et une ganache montée chocolat blanc/café.
Le tout parfumé au whisky (juste un doigt…) pour lui donner un côté rock

Temps de préparation : ♦♦          Difficulté : ♦♦

Ingrédients (pour 4/6 personnes)

Pour le biscuit joconde au cacao :

– 2 œufs entiers + 2 blancs
– 70g de poudre d’amandes
– 70g de sucre glace
– 20g de beurre
– 15g de sucre semoule
– 20g de farine
– 15g de cacao amer

Pour le crémeux au chocolat :

– 150g de chocolat noir
– 100g de crème liquide entière
– 100g de lait
– 2 jaunes d’œufs
– 30g de sucre

Pour la ganache montée chocolat/café :

– 150g de chocolat blanc
– 300g de crème liquide entière
– 2g de café soluble
– whisky

Pour le sirop d’imbibage :

– 30g d’eau
– 20g de sucre
– whisky

Préparation

Pour le biscuit joconde au cacao :

– Dans un saladier, fouetter la poudre d’amandes, le sucre glace et les œufs.
– Ajouter le beurre fondu refroidi.
– Monter les blancs en neige en les meringuant petit à petit avec le sucre semoule.
– Incorporer un quart des blancs d’œufs à la préparation précédente et mélanger.
– Ajouter la farine et le cacao tamisés.
– Incorporer le reste des blancs et mélanger délicatement.
– Répartir la pâte sur une plaque recouverte de papier sulfurisé.
– Cuire au four 8 min à 200°C.

Pour le crémeux au chocolat :

– Faire fondre le chocolat au bain marie.
– Dans un saladier, fouetter les œufs avec le sucre.
– Dans une casserole, faire bouillir le lait et la crème.
– Verser sur les œufs blanchis tout en continuant de mélanger.
– Remettre sur le feu et cuire jusqu’à épaississement (85°C).
– Verser un tiers de cette préparation sur le chocolat fondu et mélanger.
– Ajouter à nouveau un tiers et mélanger.
– Ajouter enfin le dernier tiers, mélanger.

Pour la ganache montée chocolat/café:

– Faire fondre le chocolat au bain marie.
– Dans une casserole, faire chauffer le café soluble avec 75g de crème liquide entière.
– Verser un tiers du mélange sur le chocolat fondu, mélanger.
– Ajouter à nouveau un tiers et mélanger.
– Ajouter enfin le dernier tiers et mélanger.
– Ajouter les 225g de crème liquide froide et le whisky (selon les goûts), mélanger.
– Laisser refroidir au moins 3h au frais.
– Monter la crème en chantilly.

Montage

– Découper le biscuit cacao en deux parts égales.
– Réaliser un sirop en portant à ébullition l’eau et le sucre, puis en ajoutant quelques gouttes de whisky.
– A l’aide d’un pinceau, imbiber le biscuit avec ce sirop.
– Disposer le crémeux au chocolat entre les deux couches de biscuit et mettre au frais pendant au moins 1h.

– Mettre la ganache montée dans une poche à douille et disposer sur la deuxième couche de biscuit.

Remarque : pour la déco, saupoudrer de copeaux de chocolat.
