Tarte citron praliné
La tarte au citron meringuée, je l’avais déjà réalisée ici mais après avoir goûté celle de Philippe Conticini, j’ai revu ma recette.
Le chef ajoute un biscuit aux noisettes entre le fond de tarte et la crème au citron.
J’ai choisi de mon côté d’utiliser un praliné (plus simple et plus rapide à réaliser). L’association citron/praliné fonctionne très bien.

Ingrédients (pour 8 personnes)

Pour la pâte sucrée :

– 150g de beurre mou
– 90g de sucre glace
– 30g de poudre d’amandes
– 2 pincées de fleur de sel
– 1/2 gousse de vanille
– 1 œuf
– 250g de farine

Pour la crème au citron :

– 2 citrons jaunes
– 150g de sucre semoule
– 3 œufs
– 125g de beurre

Pour la meringue italienne :

– 3 blancs d’œufs
– 130g de sucre semoule
– 40g d’eau

Pour le montage :

– praliné

Préparation

Pour la pâte sucrée :

– Travailler le beurre afin de le rendre bien souple
– Ajouter le sucre glace, la poudre d’amandes, la fleur de sel, les graines de la gousse de vanille et l’œuf et mélanger afin d’obtenir un mélange crémeux.
– Ajouter la farine et pétrir jusqu’à ce que la pâte forme une boule.
– Diviser la pâte en deux, laisser reposer un pâton au moins 1h au réfrigérateur et conserver l’autre pâton au congélateur pour une prochaine recette.
– Étaler la pâte et foncer un cercle à pâtisserie de 24cm de diamètre.
– Cuire 15min à 180°C.
– Laisser refroidir.
– Déposer une fine couche de praliné sur le fond de tarte.

Pour la crème au citron :

– Dans une casserole, presser le jus des citrons et mélanger avec le beurre.
– Faire fondre à feu doux.
– Dans un bol, blanchir les œufs avec le sucre en fouettant vigoureusement.
– Verser le jus de citron et le beurre sur la préparation précédente.
– Remettre l’ensemble dans la casserole et faire cuire jusqu’à épaississement de la crème.
– Verser immédiatement sur le fond de pâte.

– Dans une casserole, faire chauffer l’eau et le sucre semoule jusqu’à 118°C.
– Pendant ce temps, mettre les blancs d’œufs dans le bol du batteur et battre à pleine vitesse.
– Quand la température indique 118°C, baisser la vitesse et verser le sucre cuit petit à petit.
– Laisser tourner à grande vitesse jusqu’à refroidissement du mélange (environ 10min).
– Disposer la meringue sur la crème au citron.
