Ingrédients (pour 12 personnes)

Pour le craquelin :

– 30g de beurre salé
– 40g de cassonade
– 40g de farine

Pour la pâte à choux :

– 65g d’eau
– 65g de lait
– 1/2 cuillère à café de sucre semoule
– 1/4 cuillère à café de sel fin
– 55g de beurre
– 70g de farine
– 2 œufs

Pour la crème pâtissière au gianduja :

– 35cl de lait
– 1 gousse de vanille
– 4 jaunes d’œufs
– 80g de sucre semoule
– 35g de maïzena
– 150g de gianduja

Pour le montage :

– 100g de chocolat au lait
– noisettes caramélisées

Préparation

Pour le craquelin :

– Mélanger tous les ingrédients et former une boule.
– Étaler finement entre deux feuilles de papier sulfurisé.
– Mettre au frais et découper à l’emporte pièce des rectangles de la taille des éclairs.

Pour la pâte à choux :

– Dans une casserole, verser l’eau, le lait, le sucre, le sel et le beurre coupé en morceaux et faire chauffer sur feu moyen.
– Lorsque le beurre est fondu et le mélange est bien chaud, ajouter la farine.
– Remuer avec une cuillère en bois jusqu’à ce que la farine soit totalement absorbée.
– Remettre sur feu moyen en continuant de mélanger pendant 30s pour dessécher la pâte.
– Incorporer les œufs un à un tout en mélangeant avec la cuillère en bois.
– Mettre la préparation dans une poche à douille.
– Sur une plaque recouverte de papier sulfurisé, dresser des éclairs de 11cm de longueur.

– Mettre la crème pâtissière au gianduja dans une poche à douille et garnir les éclairs.
