Ingrédients (pour 8 personnes)

Pour le sablé breton :

– 3 jaunes d’oeufs
– 130g de sucre semoule
– 150g de beurre mou
– 200g de farine
– 1 pincée de sel
– 1 sachet de levure chimique

Pour la chantilly pistache/cardamome :

– 150g de crème liquide entière
– 70g de mascarpone
– 25g de pâte de pistaches
– 15g de sucre
– 6 capsules de cardamome

Pour le montage :

– 400g de fraises
– pistaches concassées

Préparation

Pour le sablé breton :

– Battre les jaunes d’œufs avec le sucre pour les blanchir.
– Ajouter le beurre mou et mélanger à l’aide d’une spatule en bois.
– Lorsque que la préparation est homogène, ajouter la farine, le sel et la levure, mélanger.
– Filmer la pâte et laisser reposer 2h au réfrigérateur.
– Étaler sur une feuille de papier sulfurisé légèrement farinée pour obtenir une épaisseur de 4 à 5mm.
– Cuire la pâte dans un cadre 20min à 180°C puis découper aussitôt des cercles de 7cm de diamètre.

– Monter la crème en chantilly.

– Ajouter ce mélange petit à petit à la crème montée tout en continuant de fouetter.
– Réserver au frais.

Montage

– Couper quelques fraises en dés et disposer sur les fonds de sablés bretons.
