Un dessert tout simple, frais et léger avec des poires rehaussées de caramel au beurre salé, d’une mousse de mascarpone et de morceaux de crumble croustillant

Ingrédients (pour 4 personnes)

Pour la mousse au mascarpone :

– 125g de mascarpone
– 60g de crème liquide entière
– 1 gousse de vanille
– 2 œufs
– 30g de sucre semoule

Pour le crumble :

– 30g de beurre
– 30g de cassonnade
– 30g de farine
– 30g de poudre d’amandes

Pour le caramel au beurre salé :

– 125g de sucre semoule
– 50g de beurre salé
– 120g de crème liquide entière

Pour le montage :

– 2 poires pochées

Préparation

Pour la crème au mascarpone :

– Monter la crème en chantilly.
– Dans un saladier, détendre le mascarpone au fouet puis ajouter les graines de la gousse de vanille.
– Ajouter ce mélange petit à petit à la crème montée tout en continuant de fouetter.
– Battre les blancs d’œufs en neige bien ferme.
– Incorporer délicatement au mélange précédent.

Pour le crumble :

– Dans un saladier, mélanger la farine, le beurre, le sucre, la poudre d’amandes afin d’obtenir une boule.
– Étaler des petits morceaux sur une plaque recouverte de papier sulfurisé.
– Cuire au four 10min à 180°C.

– Faire caraméliser le sucre à sec dans une casserole sur feu moyen.
– Lorsque le caramel est prêt, retirer du feu, ajouter la crème liquide et mélanger.
– Ajouter le beurre coupé en morceaux et bien mélanger.
– Remettre sur feu moyen et porter à ébullition pour faire épaissir le caramel.
– Laisser refroidir.

Montage

– Déposer un peu de caramel au fond des verrines, puis ajouter une couche de mousse au mascarpone.
– Ajouter des dés de poire et des morceaux de crumble.
