– 250g de framboises
Préparation
Pour la pâte sucrée :
– Travailler le beurre afin de le rendre bien souple
– Ajouter le sucre glace, la poudre d’amandes, la fleur de sel, les graines de la gousse de vanille et l’œuf et mélanger afin d’obtenir un mélange crémeux.
– Ajouter la farine et pétrir jusqu’à ce que la pâte forme une boule.
– Diviser la pâte en deux, laisser reposer un pâton au moins 1h au réfrigérateur et conserver l’autre pâton au congélateur pour une prochaine recette.
– Étaler la pâte et foncer 6 cercles à tartelettes.
– Cuire 15min à 180°C.
– Laisser refroidir.
Pour la crème au citron :
– Dans une casserole, presser le jus des citrons et mélanger avec le beurre.
– Faire fondre à feu doux.
– Dans un bol, blanchir les œufs avec le sucre en fouettant vigoureusement.
– Verser le jus de citron et le beurre sur la préparation précédente.
– Remettre l’ensemble dans la casserole et faire cuire jusqu’à épaississement de la crème.
Montage
– Verser la crème au citron sur les fonds de pâte.
– Déposer les framboises et mettre au frais.
