Ingrédients (pour une quarantaine de petits macarons)
Pour les coques
– 125g de poudre d’amandes
– 125g de sucre glace
– 30g d’eau
– 125g de sucre semoule
– 2 x 50g de blancs d’œufs (séparés des jaunes depuis 3jours et conservés à température ambiante)
– colorant alimentaire orange
Pour la ganache au potimarron
– 1 potimarron
– 120g de chocolat blanc
– une pincée de cannelle en poudre
Préparation
Pour les coques
– Mixer la poudre d’amandes et le sucre glace, puis passer au tamis.
– Verser 50g de blancs d’œufs et mélanger jusqu’à obtenir une sorte de pâte d’amandes.
– Dans une casserole, faire chauffer l’eau et le sucre semoule jusqu’à 118°C.
– Pendant ce temps, mettre les 50g de blancs d’œufs restant dans le bol du batteur et battre à pleine vitesse.
– Quand la température indique 118°C, baisser la vitesse et verser le sucre cuit petit à petit.
– Laisser tourner à grande vitesse jusqu’à refroidissement du mélange (environ 10min) et ajouter le colorant orange.
– Incorporer petit à petit la meringue italienne à la pâte d’amandes.
– Mettre la préparation dans une poche à douille et former de petites boules sur une plaque recouverte de papier sulfurisé.
– Taper légèrement sous la plaque pour lisser les macarons.
– Laisser croûter 30min et cuire 12min à 150°C.
Pour la ganache au potimarron
– Éplucher et couper le potimarron en morceaux, cuire dans une casserole pendant 20min.
– Égoutter et mixer les morceaux de potimarron.
– Prélever 250g de cette purée chaude et verser sur le chocolat blanc, ajouter la cannelle.
– Attendre quelques minutes puis mélanger.
– Mettre la ganache dans une poche munie d’une douille et garnir les coques.
